CASSATELLE OF RICOTTA CHEESE
INGREDIENTS: 500g of flour, 100g of sugar, ½ glass of virgin olive oil, 2 spoons of Marsala wine, 400g of ricotta cheese, 50g of dark chocolate, cinnamon, powdered sugar, seed oil and salt.
It’s a typical Sicilian sweet, called in different ways: for example in Trapani they’re called “cassateddre” and near Marsala “cappiddruzzi”.
Start sifting the flour and add 2 spoons of sugar, the Marsala wine, olive oil and a pinch of salt. If necessary add a bit of water until you obtain a consistent mixture. Cover with a dry kitchen towel and allow to rest for 30 minutes. Meanwhile prepare the filling sifting carefully the ricotta cheese, if possible buy the ricotta already dried or let it sit for a day before preparing the cassatelle. Excess water might ruin them during the frying process. In a bowl pour and knead all the ingredients for the filling: the sifted ricotta cheese, the remaining sugar, chocolate chips and a pinch of cinnamon. After half an hour, stretch the dough making thin puff pastries and cut into circles, put a spoonful of seasoned ricotta cheese, fold the disk making a half-moon shape. Fry the cassatelle in hot seed oil; drain the excessive oil and serve hot with powdered sugar on the top.
